




Wagyu

The word 'Wagyu' comes from Japan, with 'Wa' meaning Japanese and 'Gyu' meaning cow. This type of cattle is now produced in many countries, including the United States, Canada, Australia, and beyond. We chose this particular breed for our farm in northern Quebec because it is a hardier type of Wagyu, well-suited to thrive in our region's challenging climate.

One of the defining characteristics of Wagyu beef is its high degree of marbling, which refers to the intramuscular fat distributed throughout the meat. This marbling gives Wagyu beef its buttery texture, tenderness, and rich flavor.

Wagyu beef is renowned for its exceptional quality and limited availability. It is often regarded as a delicacy, for its unique flavor and tenderness.
